| Dill flowers in July and August.
Plant in a sunny, well drained spot. Dill
dislikes being moved so sow the seeds in April where you want
the plants to stay then thin them to 12in. apart.
When
harvesting the seeds wait till the flower heads have turned
brown to cut the stems. Hang stems upside down in bundles with
paper bags tied over the flower heads.
Leave
some dill flowers on to get a constant supply of seed.
Leaves are best gathered whilst they are still
young and used immediately.
Nowadays dill is not really used for
medicinal purposes, it is mainly used for its preserving
properties. Dill seeds are great for pickling fruit and
vegetables.
Dill leaves make a great garnish, chop onto meats
and veg dishes. Use seeds in cakes, bread and
fish.
